Vanilla kiwi mousse 

Ingredients :

(for 4 people)
  • 7 kiwis
  • 50 g of sugar
  • 2 eggs
  • 1 g of agar agar
  • 1 teaspoon of vanilla extract

Preparation :

  1. Peel and mix 6 kiwis. Peel and cut the 7th kiwi into slices then cut these slices in half.
  2. Separate the yolks from the egg whites. In a bowl, whisk the egg yolks and sugar until the mixture turns white. Add all the kiwis.
  3. In a saucepan, heat the preparation over low heat (do not bring to a boil). When the mixture begins to thicken, remove the pan from the heat, add the agar agar then let cool.
  4. Beat the egg whites until stiff with the vanilla extract. Add the stiff egg whites to the kiwi preparation.
  5. Serve the mousse in the jar, decorate with the kiwi slices.
  6. Leave to stand for at least 2 hours.
