Vanilla kiwi mousse
Ingredients :
(for 4 people)- 7 kiwis
- 50 g of sugar
- 2 eggs
- 1 g of agar agar
- 1 teaspoon of vanilla extract

Preparation :
- Peel and mix 6 kiwis. Peel and cut the 7th kiwi into slices then cut these slices in half.
- Separate the yolks from the egg whites. In a bowl, whisk the egg yolks and sugar until the mixture turns white. Add all the kiwis.
- In a saucepan, heat the preparation over low heat (do not bring to a boil). When the mixture begins to thicken, remove the pan from the heat, add the agar agar then let cool.
- Beat the egg whites until stiff with the vanilla extract. Add the stiff egg whites to the kiwi preparation.
- Serve the mousse in the jar, decorate with the kiwi slices.
- Leave to stand for at least 2 hours.
